A renowned chef with two Michelin stars has responded to criticism from food safety authorities following the Food Standard Agency’s lowest rating given to his restaurant.
The Ynyshir Restaurant and Rooms in Ceredigion, Wales, known for its nearly £500 per head dining experience, received a one-star rating from the FSA during an inspection on November 5 last year. This rating, the lowest possible from the agency, indicates the need for significant improvement in food safety measures, contrasting with the restaurant’s prestigious Michelin stars.
Despite the agency’s assessment, the chef patron of the establishment defended its practices, emphasizing that their standards are among the highest globally due to their unique approach to cuisine.
Following the announcement, Gareth Ward, a prominent chef featured on MasterChef: The Professionals, explained that the restaurant sources top-quality ingredients worldwide, with a significant portion served raw. Ward highlighted that inspectors focused on the use of raw ingredients, particularly questioning the quality of imported fish for sashimi.
Ward expressed frustration at the inspectors’ scrutiny of aged ingredients and their reluctance towards the concept of aging food items, including fish stored in a salt chamber. The inspection report published on the FSA’s website highlighted the need for major improvements in food safety management, cleanliness, and facility conditions, while acknowledging satisfactory food handling practices.
While acknowledging some discrepancies in paperwork, Ward maintained his confidence in the restaurant’s unique culinary approach. He stated that the restaurant’s innovative practices may not align with conventional regulations, but he remained unapologetic and committed to providing a distinctive dining experience.
